Sous Chef
The Client
Our client is well established within the hospitality industry and is looking for a Sous Chef to join their kitchen brigade. The chosen candidate will assist the Head Chef and the Executive Sous Chef in the day to day running of the kitchen.
 
Key Responsibilities
  • Ensuring that the necessary stocks are on hand at the right quality and quantity
  • Checking that timetables, leave rosters and attendance registers are up-to-date
  • Ensuring that all statutory, as well as company, hygiene regulations are being strictly adhered to
  • Checking that regular on-the-job training is carried out so that subordinate staff perform their duties correctly
  • Assisting in the HACCP for all areas within the kitchen and its outlets
  • Ensuring that each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature
  • Communicating any special requirements regarding VIP functions
  • Conferring and communicating with the Head Chef and the Executive Sous Chef policies and procedures between kitchens and the food and beverage department
  • Deputising in the Executive Sous Chef’s absence
  • Ensuring all security incidents and accidents are always logged in a timely manner and brought to the attention of the direct manager
Requirements
  • Minimum of 2-3 years experience in a supervisory role
  • Relevant qualification from ITS
  • Excellent team player
  • Proactive and thrives on creativity
  • Able to work under pressure
  • Knowledge about all Health and Safety and food handling procedures
  • Computer literate
